Gelato Dorayaki made with local ingredients sold in Kaohsiung, Taiwan

We visited “Ciao Lucia” and “Da Chang Tang”, which produce and sell gelato Dorayaki in Kaohsiung, a city located in the south of Taiwan!
The tabletop pancake cooker (SDR-SE-TT) is used for the production of Dorayaki crusts.

The introduction of the system was triggered by his participation in a workshop in Taipei in the spring of 2023.Mr. Guo, who wanted to sandwich gelato, and Ms. Chen, who wanted to improve the efficiency of Dorayaki production, decided to purchase jointly.
Ms. Chen makes Dorayaki and Mr. Guo makes gelato, and the two are combined to make gelato Dorayaki, which is exhibited and sold at events.

Mr. Guo’s gelato store, Ciao Lucia, was founded in 1945.It has been going on since my grandmother’s generation.
The gelato is made with local Taiwanese ingredients and comes in a variety of flavors, including mango, chocolate and Taiwanese banana, and oolong tea.
Strawberry is popular among children, while oolong tea and lychee are popular among adults.
At the exchange meeting between the Second High School, Tokyo University of Agriculture and Kaohsiung City held in early October 2023, gelato Dorayaki were served to about 300 students from Japan and the mayor of Kaohsiung City as a Japanese-style product.

Gelato is rich and full of flavorful ingredients.

Ms. Chen’s “Da Chang Tang” uses Facebook to produce, sell, and ship confections upon receiving an order, a cook-to-order system. The Dorayaki is sandwiched between peach-flavored buttercream. The peach jam used for the cream is also handmade from scratch.
In the beginning, she used a frying pan with gas to bake the dough for Dorayaki. After having difficulty controlling the heat level and placing large orders, she came across a tabletop pancake cooker and decided to purchase one. Previously limited to 100 crusts per day, production capacity has now quadrupled.

Sandwiched between buttercream with a soft aroma of homemade peach jam. Shipped in frozen and eaten naturally thawed. It is also delicious when eaten in a semi-thawed state.

“I was attracted to Made in Japan. The copper plate allows me to bake beautifully and maintain a constant temperature, which is very helpful.About three times a week, at the most, I make 100 pieces (200 crusts) at a time.Right now, I bring the baked Dorayaki crusts in batches and sell them locally sandwiched with gelato and other ingredients, but it would be even better if the machines were more compact so they could be baked onsite.Taiwan has a food stall culture, but even in food stalls, gas is not available, so the electric type is attractive. It would be great to see a 110V (Taiwanese household power supply) version.”

Ingredients for the Dorayaki crust are eggs, sugar, honey, flour, milk, and baking soda.It is simple, but uses carefully selected local ingredients. The baked crust is crisp and matches the gelato and buttercream. It is also characterized by its unique sponge cake-like flavor and gentle sweetness, which is softly fragrant at the end.

“When I switched from chicken eggs to duck eggs while making basque cheesecake, it was so delicious that I also used duck eggs in the batter for Dorayaki. Also, the local sugar “Torao Sugar” is made in a traditional way and has a different color and flavor from caster sugar and granulated sugar.”

Two sizes of Dorayaki crusts are available. The ladle is made in different sizes (the larger ladle is for gelato and the smaller one is for buttercream).
