Waffle

Waffles are a beloved dessert classic, known for their fluffy batter and delightful cream toppings. With a simple switch of the pan in the Compact Pancake Cooker, we whipped up some delicious waffles!

Ingredients

  • Eggs:660g
  • Granulated sugar:320g
  • Trehalose:160g
  • Cake Doll (MIYOSHI OIL & FAT CO., LTD.):120g
  • Baking Powder:16.2g
  • Violet (NISSHIN SEIFUN):600g
  • Rum:4.8g
  • Water : 240g

How to make the batter

Begin by whisking the whole eggs, add granulated sugar, trehalose, and Cake Doll, mixing them thoroughly.

When it is mixed completely, the mixing is done.

Add cake Doll and BP while mixing at a low speed.

At the beginning, mix it gently so that the powdered ingredients do not become airborne.

Introduce rum and water into the mixture, continuing to mix until well combined.

Vigorously whisk the batter until it forms a foam, then measure the specific gravity.
Ensure that the batter’s specific gravity falls within the range of 0.70 to 0.75.
The batter is ready. It looks smooth and beautiful.

How to cook the batter

Set the Tabletop Pancake Cooker to 180℃.

Apply oil (Bitakatto SL) on the copper cooking surface.

Pour the batter into the pan, give it a light spray, and then cover it.

After 2 minutes, flip it over, and continue cooking for an additional 40 seconds (a total cooking time of 3 minutes).

Steaming while using a misting spray enhances the even distribution of heat and ensures the waffle is thoroughly cooked through.
The Waffles are cooked nicely!

Examples of fillings

Create a maritozzo-like appearance by sandwiching whipped cream and Shine Muscat between the waffles.
Garnish the waffles with whipped cream and your favorite fruit to give them an appealing, café-worthy appearance.

Fluffy batter and whipped cream are a delightful combination!
This time, we crafted them in a round shape, but experimenting with different shapes can yield a wide array of products.
