Made with two flour mixes! Soft and fluffy pancake
Here’s a recipe to create superb soft and fluffy batter by mixing two flour mixes. “Is it okay to mix flour mixes?” Of course!
It works with all kinds of fillings, so try it out!
Ingredients for 38 pancakes (76 slices)
- Flour mix S600 (NIPPN CORPORATION): 600g
- Flour mix J770 (NIPPN CORPORATION): 400g
- Granulated sugar: 800g
- Baking powder: 50g
- Eggs: 575g (Net weight. For eggs with shells, about 10 x L-sized eggs.)
- Brandy: 15g
- Water: 300g
[Fillings (for this recipe)]
- Fresh caramel flavored flour N (Tanaka Foods)
- Almond crunch
- New York cheese cream (Tanaka Foods)
- Arude strawberry (Tanaka Foods)

How to make the batter
Put eggs, water, and brandy into a bowl and mix until it becomes smooth. (Bring eggs to room temperature beforehand.)
Add the two flour mixes, granulated sugar, and baking powder, and mix until lumps are gone. (You can add all at once.)
The batter is ready when a letter you draw into the surface disappears almost right away.
How to cook the batter
Set the Tabletop Pancake Cooker to 180℃.
Apply oil (Bitakatto SL) on the copper cooking surface.
Deposit the batter, flip it after a minute and a half, then cook for another 30 seconds (a total of two minutes).
The lid is not used.
Examples of fillings
A flour mix is easy to make, tastes great, and is convenient, as well as being easy and delicious to mix!
The batter itself tastes great on its own and has an excellent texture, so even with rich fillings, they don’t lose their presence.
This time, we used a ratio of 6:4, but if S600 is increased, it will be crispier, and with J770 increased, it will be softer.
